Day 2 – Learn about mechanical leavening, i.e., how we use whipping to get air into foods. Bake mini-pavlovas and top with lemon curd and fruit. Prepare chicken, bacon, ranch wraps with homemade tortillas and ranch dressing.
Day 3 – Dessert and dinner from one batter; popovers with stew and crepes with lemon ricotta filling, made from homemade ricotta cheese.
